Watermelon Recipes
Watermelon and warm weather go hand in hand. Using watermelon for something other than an after picnic dessert is easy with a little imagination. Refreshing and nutritious watermelon can be used many different ways. Just hand me my Watermelon Margarita and we will discuss it.


Watermelon Salsa Recipe
Yields 8
ingredients

2 cups chopped seedless watermelon
1/4 cup chopped pitted Kalamata olives
1/2 English cucumber, chopped
1 small jalapeno pepper, seeded and minced
2 tablespoons minced red onion
2 tablespoons white balsamic vinegar
1/2 teaspoon salt
1 tablespoon olive oil

directions

Combine chopped watermelon with all the ingredients. Place salsa in ceramic bowl and chill for at leas an hour. Toss before serving. Serve with fish or poultry for a refreshing bite of sunshine.

Watermelon Sorbet
Serves 8
Ingredients

3 cups water
1 cup sugar
4 cups seeded, chopped watermelon
1/4 cup lime juice

directions

Bring the water and sugar to a boil in a medium saucepan over high heat, stirring until sugar dissolves. Remove from heat. Cool. Process sugar syrup and watermelon, in batches, in a blender until smooth. Stir in lime juice.
Cover and chill 2 hours. Pour mixture into the freezer container of a 1-gallon ice-cream maker, and freeze according to manufacturer's instructions.

Watermelon Margarita
Yields 2 to 4

ingredients

16 ounces seeded, blended watermelon
1/2 lime
6 ounces tequila
3 ounces triple sec
1 tablespoon sugar or simple syrup

directions

Cut up a watermelon, removing seeds. Liquify in a blender until you have about 16 ounces Add remaining ingredients, top with ice and blend until smooth. Taste the mixture, if it is not sweet enough, add sugar or simple syrup to taste. Serve in a margarita glass with a sugar-coated rim.


Watermelon Ice Cubes

Ingredients
Watermelon

Cut the watermelon in half, scoop out insides and puree in a food processor or blender. Place blended watermelon in ice cube trays and freeze. This can also be done with other fruits. These ice cubes can be added to lemonade, ice tea or whatever cold drink catches your fancy.

Watermelon Ice cube Punch Recipe
Yields 6
ingredients

1 16 ounce bottle ginger ale
4 cup water
1 frozen limeade concentrate
12 watermelon ice cubes

directions

Place 6 of the watermelon ice cubes in a blender, pulse until smooth. Pour mixture into a large pitcher top up with the ginger ale. Place the frozen limeade and the water in the blender, pulse and add to the pitcher – stir. Place watermelon ice cubes in glasses and pour water melon punch over ice cubes. Create a garnish either thin watermelon triangles or lime wedges. Now enjoy.
