2 lbs of flounder or sole, flounder (fillets only) cut into 2 inch squares
2 cloves garlic, finely chopped
1/4 cup olive oil
3 tbsp lime juice
6 tbsp cold water
2 medium tomatoes, peeled and chopped
1 medium white onion, finely chopped
2 chilli peppers, seeded and chopped
1 tbsp torn cilantro leaves
Add salt and pepper to taste
Put onion, chilli pepper, cilantro leaves, lime juice, tomatoes, salt, garlic, into blender, then blend until well pureed. Add this to the fish cubes that have been placed in a large bowl. Let stand for at least 45 mins (mix once so flavor goes through). Add water and olive oil. Pour into large heavy pan with cover. Cook covered over medium heat. Bring to low simmer until the fish is done. This will take 5 to 7 mins only because of marinade. Handle gently, fish will be very tender.
Serve over hot rice or broad egg noodles.
