Bean dip with a kick is a tasty and heathly way to snack and get your fiber too.
Carrots which are a rich source of beta carotene go nicely with this dip. May be served on toast points or crackers also.
Ingredients
1 15-ounce can low-sodium Great Northern beans, rinsed and drained
1/4 cup low-fat salad dressing, any variety
1/4 teaspoon hot pepper flakes, or to taste
1 tablespoon chopped parsley
dash of salt and ground black pepper (optional)
1 pound carrots, cut into sticks, ready-peeled small carrots, or other cut-up veggies
Directions
1. Combine beans with salad dressing in a blender, until smooth and creamy.
2. Remove from blender and add hot pepper flakes, salt, pepper and parsley.
3. Let sit for 10 minutes to marry flavor.
Serve as a dip for carrots or other cut-up vegetables.
Make 4 appetizer servings
Hint:
Serve on warm Pita bread.
