Æbleskiver
2 1/2 c. flour
1 1/4 tsp. baking soda
3/4 tsp. baking powder
1/2 tsp. salt
2 c. buttermilk
2 tbsp. melted shortening (or butter, if desired)
2 eggs, separated

Combine buttermilk, melted shortening and beaten egg yolks. Mix thoroughly. Add beaten egg whites. Set aside. Sift together flour, baking soda, baking powder and salt. Add buttermilk mixture. Pour by 1/4 cupfuls in Abelskiver pan. (A specialty item that can be purchased at stores such as William Glen. The pan is a cast iron-type skillet with 5-6 indentations.) Fill each hole with batter. As the "pancakes" cook, they will rise and become the shape of baseballs. Cook 2-3 minutes on each side, turning carefully with fork. Dip in sugar, syrup or applesauce; or fill with favorite jam.
