Fresh Mushroom Salad

Fresh Mushroom Salad
2 c. water 1 1/2 tsp. grated onion
2 Tbsp. lemon juice 1/8 tsp. white pepper
1 lb. fresh mushrooms, cut in 1/8" slices
1 tsp. salt 1/2 c. heavy cream
Lettuce chopped fresh chives

Bring water and lemon juice to a boil in saucepan. Add mushrooms, cover pan and reduce heat. Simmer gently 2 - 3 minutes. Remove from heat, drain and pat mushrooms dry with paper towels.
In a 2 - quart bowl combine cream, onion, pepper and salt. Add mushrooms and toss lightly in cream mixture until well coated. Serve on lettuce and garnish with chopped chives. Makes 4 - 6 servings.
