Pancakes and Waffles - Book Review

Pancakes and Waffles by Elizabeth Alston

I love this author, I own one of her books, “Muffins” and so when I saw this book of hers at my library about pancakes and waffles I wanted to check it out. She also authored “Biscuits and Scones”, “Breakfast with Friends” and “Tea Breads and Coffeecakes”.

In this book about pancakes and waffles she strives to make us think about how versatile they can be and how we don’t just need to eat them for breakfast. This is a wonderful concept for all of us who love breakfast and would want to eat it three times a day!

Her recipes are very clear and well written. I had never made blintzes before but by following the recipe on page 100 for “Baked Apple Walnut Blintzes” I was able to create a masterpiece!

“Potato, Chive and Bacon Waffles” page 74 was an amazing recipe to have on hand to use with the mashed potatoes from the night before.

The “Vermont Baked Cheddar and Apple Pancake” page 58 was truly yummy. It is one of the puffy, pancakes that you bake in the oven! Very easy!

For dinner one night I tried “Cornmeal Waffles with Quick Chili and Sour Cream” page 51. I had to make the waffle batter to start and then while it was thickening I started on the chili. When the chili was simmering in cooked the waffles. Call the family, serve the chili over the waffles and top it with sour cream. You could also cook both ahead and freeze them to reheat later.

“Chilies Con Queso Pancake” page 19 was a variation on the “Super-Simple Plain Baked Pancake”. While the pancake is baking I had to chop up tomato, scallions, jalapeno and cilantro and shredded the cheese. When the pancake was baked I just put this on top and let the cheese melt for about 3 minutes. Yummy!

For a seasonal treat try “Gingerbread Pancakes” page 92 with “Lemon Sauce” page 119 or “Honey Butter” page 127.

If you have grandkids over it is fun to make “Sour Cream Silver Dollars” page 23. This recipe makes about 50-55 silver dollars and will feed 10 grandkids- unless they are teens.

If you want recipes for breakfast, light meals, dessert, syrups, sauces and toppings that start with the basics of pancakes and/or waffles. The recipes are easy for someone who fairly new at cooking or feels that they cannot do gourmet cooking… OK, maybe you don’t consider pancakes and muffins as gourmet, but as I learn new recipes I feel like I am becoming a “chef”!
