Guest Author - vandana trivedi

Ingredients:
Lamb mince 400 grams.
Chopped ginger 1 tsp.
Chopped green chilli ½ tsp.
Chopped green coriander ½ tsp.
Garam masala powder 1 tsp.
Red chilli powder 1 tsp.
Oil 1 tsp.
Salt As per taste

Method:
1. Squeeze mutton mince in a dry cloth to remove excess water.

2. Mix all the above ingredients except oil in a blender. Keep the mixture in the refrigerator for at least 2 hours.

3. Now take the mixture out of refrigerator, divide into 8 equal portions and make balls.

4. Mould the mince balls on to the kebab skewers, using a wet hand. Press evenly to get kebabs of six inches length.

5. Pre heat the oven on 175° C

6. Place the skewers in a roasting dish,

7. Roast for 10 minutes. Turning them after 5 minutes.

8. Brush with oil and again roast for 2 minutes.

Serve hot with naan and mint chutney

Alternatively you can grill them on wood charcoal fire turning them often, so that the kebabs roast evenly on all sides, to a dark brown colour.
