Wee Widdle Cheesecakes

4 ounce (1/3 package) vanilla wafers or graham crackers
2 (8 ounce) packages cream cheese, at room temperature
3/4 c. white sugar
2 eggs
1 teaspoon vanilla extract
1 (21 ounce) can fruit pie filling, e.g., cherry, blueberry
Preheat oven to 350 degrees Fahrenheit.

Line muffin tins with foil cupcake liners.
Crush the vanilla wafers or graham crackers, and place 1 tablespoon of the crushed vanilla wafers into each paper cup.
Place the cream cheese, sugar, eggs and vanilla in a large mixing bowl, beat with an electric mixer until light and fluffy.
Fill each muffin liner two thirds to the top with this mixture.
Have an adult place in oven and bake for 20 -25 minutes or until the mixture is firm to the touch and before the cakes crack. Cool.
Top with a teaspoonful of fruit pie filling and enjoy!
