Great  Winter Casserole Recipes
Here are two great go to recipes that work well made ahead. The slight hint of curry in the Chicken Broccoli Cheddar Casserole is very warming during the winter. Just pop either of these casseroles in the oven for 40 minutes and "voila" a nice hearty meal is served. We love this both casseroles served with Naan bread. These are also a great dishes for a potluck dinner even serve to friends for an impromptu get together.

Chicken Broccoli Cheddar Casserole

Ingredients
serves 6 to 8

1 large. bunch broccoli
2 to 4 large chicken breasts
1 can cream of mushroom soup
1 teaspoon lemon juice
1 cup mayonnaise
1/4 teaspoon black pepper
1/8 teaspoon salt
1 1/2 teaspoons curry powder
1 cup shredded cheddar cheese
1 cup crumbled croutons or soft bread crumbs sauteed with 1 tablespoon of butter

Directions

Season chicken breasts with a sprinkle of salt and bake until tender --then remove from pan. Steam broccoli about 5 minutes make sure it is still a little firm. Combine soup, lemon juice, curry powder,salt pepper and mayonnaise until well blended. Put broccoli on bottom of casserole, then chicken pieces on top. Pour sauce over the chicken and broccoli. Sprinkle cheese and then croutons/breadcrumbs over all. Bake at 350 degrees for 40 minutes. Top should be bubbling and golden brown.


Chicken Broccoli Cheese and Rice

Ingredients
serves 6 to 8

2 cups cooked shredded chicken
2 cups cooked rice
3 cups cooked broccoli
1 cup Velveeta cheese diced
3 ounces of cream cheese diced
1 can (10 ¾ ounces) of cream of broccoli soup
1/4 onion diced small
1 tsp ground. black pepper
Frenches Fried Onions (optional)

Directions

Cook rice in water covered, over very low heat (this will take about 20 minutes). While rice is cooking boil broccoli & onion until tender. Melt cheeses together with soup, stir occasionally until melted. Combine all ingredients and seasoning in baking pan and bake in oven 350º F approximately 40 minutes until bubbling.
NOTE: This dish is great sprinkled with a few of the fried onions around the sides for a tasty texture -- enjoy.
