Plump plum tomatoes are the stars of this tomato-onion confetti recipe. Serve over grilled meats or fish.
6 plum tomatoes, chopped
1 small white onion, coarsely chopped
1 small can whole kernel corn
2 tblspn lemon juice
1-1/2 or 2 tspn finely chopped jalapeno pepper*
1 green onion, sliced very thin
Salt and pepper to taste
Mix all ingredients well except green onion. Put in bowl and sprinkle green onion as garnish. Serve at room temperature for full flavor. Serve over grilled meats or fish. Hot buttered rice will cut heat.
*Always use rubber gloves when handling jalapeno or any hot pepper.
*A 1/2 cup of tomato-onion confetti can also be tossed with baby spinach leaves and a bit of crumbled Feta Cheese for a delicious salad.
