Wilted Spinanch Salad Recipe

If you have not had an authentic wilted spinach salad you have missed a real treat. Flavorful hot bacon fat is poured over fresh spinach and thinly sliced red onion. The heat wilts the lettuce. While this is not a salad to eat everyday it is a treat for special times.

Ingredients

1 package of fresh spinach, usually in 10 to 12 oz. packages
2 eggs, boiled, 1 slice one egg for garnish, chop remaining egg
4 slices bacon, cooked until crisp
1 medium red onion, thinly sliced
2 tblspn bacon fat

Directions

Fry bacon until crisp, remove from pan and place on paper towels.
Put lettuce in a large mixing bowl (lettuce leaves should be completely dry). Chop one egg and slice red onion. Place egg and onion in bowl with lettuce and mix well. Crumble bacon into salad then drizzle bacon fat in to wilt the spinach. Lift the salad from the bottom to top to blend and mix. Top with sliced cooked egg and serve.

Makes 8 small servings.
