Beer Cookery - Widerkomm Steak Tournedos Recipe

The Beer Fox says, ”Tender tips of beef in a euphoric blend of complex herbs and juices.”

Recommended Brew: Thomas Hooker Irish Style Red Ale, Troutbrook Brewing Company, Hartford, Connecticut USA

Style: Irish Red Ale – Rich Brownish Garnet Color – Fully assertive caramel maltiness, with ever-so-subtle smoke and roasted flavors, with some graininess and earthy hop bitterness.

2-3 lbs. tournedos of beef
3 tablespoons butter
2 tablespoons olive oil
1 tablespoon chopped onion
8 large mushroom caps
2 tablespoons water
3 oz. Thomas Hooker Irish Red Ale
1 tsp. chopped shallots
2 tsp. chopped parsley
2 tsp. tarragon

Quickly sautè the tournedos in 2 tablespoons butter and oil, making sure they remain pink inside. Remove and place on serving dish. In same pan, sauté onion, mushroom caps, and shallots until lightly browned. Reduce heat. Add water. Gently stir in Thomas Hooker Irish Red Ale, adding parsley, tarragon, and 1 tablespoon butter. Gently simmer for 2 minutes. Garnish tournedos with mushroom caps. Dress with simmered juices.

Serving suggestion: Add a side of artichoke hearts that have been stewed in butter.
