Kari's Quick & Easy Lemon Cookies Recipe
Busy business owner, wife, and mom, Kari Coates likes to serve her family good food, but really doesn't have much time to spend in the kitchen. Convenience foods are a real timesaver and she uses them often when cooking. Since cookies are essential when there are kids around, Kari has tweaked an old sugar cookie recipe she pinned several years ago and makes Kari's Quick & Easy Lemon Cookies often. These cookies have a fabulously soft texture, and keep in an airtight container for several days (although that most likely won't be a problem, since they will disappear on the same day they are made). Since these cookies start with a cake mix, they require very little measuring, and the dough can be put together in about 10 minutes. Kari uses canned frosting to top the cookies, since it's convenient and actually tastes good. You can, if you have time, substitute homemade frosting.
Kari's Quick & Easy Lemon Cookies are perfect for pairing with ice cream, or for taking to potluck dinners or outdoor gatherings. They also go nicely with fresh fruit or puddings. This recipe will be one you make over and over.

48 Cookies

1 18.25 ounce lemon cake mix
2/3 cup flour
2 eggs
1/3 cup vegetable oil
2 tablespoons sour cream

1 16 oz. can lemon frosting

Sprinkles, (optional)
  1. Preheat oven to 350°.
  2. Mix the cake mix, flour, eggs, vegetable oil, and sour cream.
  3. Scoop tablespoonfuls onto parchment-lined baking sheets; roll each into a ball and flatten each cookie slightly with the bottom of a glass.
  4. Bake 9-11 minutes, or until the cookies are set - they should not brown.
  5. Remove from the oven, let sit about 5 minutes, then transfer to cooling racks.
  6. When thoroughly cool, frost with the lemon frosting and add sprinkles.
  7. Let the frosting set before storing in an airtight container.
