Vegetable Fried Rice
This dish comes together rather quickly, so make sure you have all the necessary ingredients on hand & ready to go. You’ll have this yummy meal ready to eat in a snap!
I have decided to go the vegetarian route here but feel free to add in eggs, chicken, meats or seafood if you prefer.
VEGETABLE FRIED RICE
2 cups cooked rice, grains loose & separated
1 large onion, thinly sliced
3-4 garlic cloves, finely minced
1½” piece of ginger, peeled & finely minced
3-4 dried red chilies, to taste
2 tbsp soy sauce
¼ cup carrots, peeled & julienned
1 small green bell pepper, finely diced
6-8 small mushrooms, finely sliced
6-8 baby corn
¼ cup zucchini, julienned
¼ cup green peas (frozen is fine)
2 tbsp oil (vegetable or canola)
a sprinkle of toasted sesame oil - optional
1 tbsp toasted sesame seeds for garnish – optional
freshly chopped chives for garnish (you can use garlic chives or lemon chives) – optional
freshly chopped cilantro leaves for garnish
In a large deep skillet or wok on medium high heat, add the oil. When hot, add the onions and stir fry for just a few minutes before adding the garlic, ginger & dried red chilies. Mix well and start adding the vegetables – start with the carrots. Stir fry for a minute or two and then add the green bell pepper. After another minute or so of stir frying, add the other vegetables into the wok – one by one. Stir well to combine and add in the rice. Mix well to combine and add in the soy sauce. If the rice looks a little dry, just add a little sprinkle of water. Let cook for a few more minutes until all the lovely flavors come together. Then garnish with the toasted sesame oil, sesame seeds, chives & cilantro leaves. Serve as a delicious light meal & enjoy!
To make delicious Thai Vegetable Fried Rice: simply add some raisins, cashew pieces & 1 tsp or so of Thai yellow curry powder along with the onions. Feel free to add some diced pineapple as well. You can also garnish the dish with freshly chopped mint leaves & Thai basil leaves. Also, you can omit the sesame oil & sesame seeds.
