Spicy Vegetable Stir Fry Recipe

This spicy vegetable stir fry is quick, healthful and tasty. Do not throw the broccoli stalks* away, when trimmed and peeled, they are tender and delicious whether served raw or cooked.

Ingredients

1 lb. fresh broccoli
1 cup onion, thinly sliced
1 garlic clove, minced
1 medium zucchini, cut into julienne strips
1/2 cup sliced red bell pepper
1 cup fresh mushrooms, thinly sliced
2 tbspn Soy Sauce
1/2 tspn dried ginger
Vegetable oil

Directions

Trim broccoli and peel stalks and slice on the diagonal. Break florets into in half or thirds. Heat vegetable oil in skillet and add broccoli, zucchini, onion, and red pepper. Stir fry over medium-high heat approximately 6 minutes. Broccoli should be tender-crisp. Add mushrooms and cook until tender. Stir in Soy Sauce* and Ginger. Serve hot over cook rice.

Serves 6.

Hint
*Broccoli stalks may be one of the best kept tasty veggie secrets around. They have a subtle flavor and are delicious. Add them to green salads, julienned or dime sliced.
*If you use one of the new flavored soy sauces you will get a spicier flavor. Try Watkins Hot-Honey Soy Sauce.
