It’s always fun to serve red, white and blue food on patriotic holidays such as Armed Forces Day, Memorial Day, Flag Day, and Independence Day. If you’re looking for an attractive and impressive dessert, why not try this easy Mile High Patriotic Pie? This luscious version is easy to make, since it starts with a ready-made graham cracker crust, and the red part of the filling is made with a box of Danish Dessert® in the microwave. Fresh raspberries and strawberries are added to the raspberry pudding, and that filling is swirled with an easy cream cheese mixture with fresh blueberries. The pie can be made several hours before serving.

The pie is light and fruity – the perfect dessert for a backyard barbecue or family get-together. It’s a perfect refreshing summer dessert, and when it’s not a patriotic holiday, other fruit can be substituted.

8 Servings

1 package raspberry Danish Dessert
1 1/2 cups water

2 cups sliced strawberries
2 cups raspberries

1 cup heavy cream
1 8 oz. package cream cheese, softened
2/3 cup sugar
2 cups fresh blueberries

1 9" graham cracker crust, or bake pie shell

Blueberries, for garnish
  1. Whisk together the Danish Dessert and water in a large microwave-safe container.
  2. Microwave 3 minutes; whisk until smooth.
  3. Microwave an additional 2-3 minutes or until boiling and clear.
  4. Whisk until smooth and fold in the strawberries and raspberries.
  5. Place a piece of plastic wrap directly on the surface of the pudding; refrigerate until well-chilled.
  6. Meanwhile, whip the heavy cream until stiff peaks form; set aside.
  7. Whip the cream cheese and sugar until smooth and light; fold in the whipped cream and blueberries.
  8. Spoon mounds of both of the mixtures into the graham cracker crust; swirl them together.
  9. Use the additional blueberries to form a star in the center of the pie.
  10. Cover with plastic wrap and refrigerate until serving time.
