I have brought toasted English muffins to work* and made this pepperoni pizza in the office microwave oven. Add hot pepper flakes before microwaving to give the pizza a little kick.

Ingredients

6 English muffins
3/4 cup jar pizza sauce
1 package of ready sliced pepperoni
1-3/4 cups shredded mozzarella cheeze
Hot pepper flakes to taste*

Directions

Split and lighty toast English muffins in toaster, when toasted, place on plate (microwave safe). Spoon Spread pizza sauce onto each muffin, then add pepperoni and mozzarella. You can fit 4 split English muffins on plate at one time. Microwave on high until cheese bubbles (About 1 minute or so).

Serve with a green salad with cherry tomatoes. Grapes or sliced orange are a nice addition for dessert.

Hint
*If you have pizza delivered, it sometimes comes with little packets of hot pepper flakes. Save these convenient packages.
*One toasted English muffin (2 halves) is just enough for lunch. You will need: enough pizza sauce to cover both halves (put in a small jar); 6 or 8 pepperoni slices (use small baggie), 2 tablespoons mozzarella cheese (small baggie); hot pepper flakes package. One or two pieces of fruit for dessert.
