Oatmeal Butterscotch Drop Cookies
Oatmeal Butterscotch Drop Cookies are perfect to fill up the cookie jar. These cookies are great warm from the oven and are slightly chewy, and full of butterscotch chips. They are easy to make, and call for ingredients that are most likely already on your pantry shelf or in your refrigerator: butter, white and brown sugars, flour, oatmeal, vanilla, eggs, flour, baking soda, and butterscotch chips. You can usually make these anytime without going to the grocery store.

While these aren’t fancy and aren’t the type to include on a special cookie tray; they are simply old fashioned oatmeal cookies and you’ll agree that they are yummy.

Makes 5 dozen cookies

3/4 cup butter
3/4 cup sugar
3/4 cup brown sugar
2 large eggs
1 teaspoon vanilla

1 1/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon

3 cups rolled oats
1 1/2 cups butterscotch chips

  1. Preheat oven to 350°.
  2. Cream the butter and sugars until light.
  3. Add the eggs and vanilla and beat well, scraping the sides once or twice.
  4. Measure the flour, baking soda, salt, and cinnamon into a fine strainer set over the butter mixture; shake through.
  5. Mix well. Add the oats, mix, and stir in the butterscotch chips.
  6. Scoop tablespoons onto parchment or Silpat lined baking sheets.
  7. Bake 10-12 minutes or until the centers of the cookies are just set. Do not overbake. Cool thoroughly before storing in an airtight container.
