Spicy Red Rice Recipe
2 cups long grain rice
1 large white onion, diced
1 cup tomatoes, diced*
1 tspn garlic, minced
3/4 to 1 tspn red pepper flakes
1 tbspn fresh cilantro, roughly chopped (save 1/2 as garnish)
2 cups chicken broth
1/2 cup water
1/2 cup tomato paste
1/2 to 2 ounces vegetable oil for browning rice and onions
Salt and pepper to taste
Dash of cumin
Preheat oven to 350 degrees
Sauté rice and onion in large ovenproof saucepan with cover, stir until rice is golden. Combine remaining ingredients (use 1/2 tbspn cilantro) and add to rice mixture, stir and cook for 5 minutes over medium high heat. Remove from heat. Cover and bake for approx 25 minutes or until rice is done.
Fluff rice and serve with hamburgers and sauteed carmelized onions*. Add a mixed green salad. A tall glass of iced tea is perfect with this meal.
Garnish rice with remaining cilantro if desired.
Makes 8 servings.
*If you can't find good ripe tomatoes, used canned diced tomatoes.
*Slice two large onions and saute in oil until browned and carmelized. Will top to 8 to 10 burgers. When onions are sauteed until they carmelize, become sweet and savory.
