Good n' Spicy Cocktail Sauce

Shrimp cocktail is an oldie but goodie. The proof of the popularity of shrimp cocktail is revealed when you look at appetizers listed on upscale restaurant menus across the globe. However, shrimp cocktail is only as good as the sauce the shrimp is dipped in.

INGREDIENTS

3/4 cup horseradish
1 cup ketchup
Juice from 1/2 freshly squeezed lemon
Cayenne pepper to taste (to taste)
Dash Tabasco sauce

DIRECTIONS

Mix first three ingredients together in bowl then add cayenne pepper and Tabasco sauce. If serving with large boiled cold shrimp, chill the cocktail sauce before serving. This spicy sauce is good with fried shrimp or any fried fish. And don't forget those delicious oyster crackers or herb dilled oyster crackers* to go along with your seafood. If you don't want prepare crackers, stop by your local supermarket and pick up a box of crackers. I like Carr's brand, I believe they are made in The Netherlands but are sold in most supermarkets in the U.S. I particularly like Carr's Cheese Melts, just two of these with your shrimp cocktail is quite filling. Serve the standard way, chipped ice in a old fashioned Champaign glass, shrimp tails placed on the chipped ice, hanging over rim. You can also serve your shrimp as an elegant first course. To serve as a first course, plate 3 or 4 medium sized boiled cold shrimp on a small bed of shredded Iceberg lettuce. Spoon sauce over shrimp and drizzle onto lettuce. Brown rice, steamed whole string beans and baby carrots go well with this.

Hint
*Serve herb dilled oyster crackers. Pre-heat oven to 325 degrees. Add 2 dashes of garlic powder and 1 teaspoon chopped fresh dill to 1/2 stick melted butter. Toss in 1 box (approximately 16 oz) oyster crackers and stir. Spread on cookie sheet and bake for 6 to 8 minutes\ or until lightly golden.
*If you are looking for special crackers like Carr's etc., know that many supermarkets have their own brand of gourmet-type crackers. You can find them at Shoprite supermarkets for sure. I have said it before these days store brands are quite good. Just compare the ingredients of the store brand against the name brand.
