Chicken and Peas in Garlic Sauce
4 Chicken breasts, no bones, no skin
1 package of frozen sweet peas
2 cups pasta sauce
2 garlic cloves, finely minced
1 medium tomato, finely chopped
Cooking oil for frying
Heat oil in skillet over medium heat. Saute chicken until lightly browned on all sides.
Add tomatoes, peas and pasta sauce to skillet, stir and cover. Continue cooking over medium until chicken is done. Remove cover and simmer 5 more minutes, sauce will reduce.
Good served over pasta or rice. May also be served over split hot Biscuits. Sprinkle with grated cheese if desired.
Makes 4 servings.
