Ingredients:
2 cups corn (frozen is fine, thawed)
2 potatoes, boiled until fork tender, peeled and cubed
1/2 cup pomegranate seeds
2-3 green chilies, finely chopped
salt & pepper, to taste
1/2 tsp cumin seeds
1/2 tbsp chaat masala
juice of 1/2 lime
1/4 roasted, unsalted peanuts
2-3 tbsp oil
freshly chopped cilantro leaves
Method:
Heat oil in a pan and when hot add the cumin seeds and fresh green chilies. Then add the peanuts. Next, add the potatoes and stir fry until golden in color. Add the corn and the spices (salt, pepper and chaat masala). Stir and add the pomegranate seeds, lime juice and cilantro seeds. Serve hot with your favorite sauces.
