Quick and Easy Sandwiches, Rolls, Pitas and Subs for Summer meals!
With today's busy schedule what could be easier than having a sandwich for a meal? Toss in a pickle and a few chips or some fruit and you've got it all! Or why not try a bowl of soup along side a tasty sandwich? One of my favorite meals was a tuna sandwich and Bean and Bacon soup as a child. I still enjoy that today.

Sandwiches are basically simple, even the cooked sandwiches. Here are several different types of sandwiches and the recipes for you to serve up a tasty treat!

CRESCENT SANDWICHES

Ham & Cheese Crescents

1 pkg refrigerated crescent rolls
3/4 cup shredded cheese
3/4 cup cooked ham, finely chopped

Unroll crescent rolls and separate. Place triangles on an ungreased baking sheet. Place a little cheese and ham on each one. Roll dough toward point starting at large end. Bake at 375ºF for 11 to 13 minutes.

Crescent Dogs

1 pkg refrigerated crescent rolls
4 slices hot pepper cheese
1 pkg all beef hot dog

Precook hot dogs by boiling a few minutes. Slice in half lengthwise.
Unroll crescent rolls and separate. Place triangles on an ungreased baking sheet. Place a half slice of cheese and half a hot dog on each one. Roll dough toward point starting at large end. Bake at 375ºF for 11 to 13 minutes.

Roast Beef & Cheese Crescents

1 pkg refrigerated crescent rolls
4 slices hot pepper cheese
1/3 lb deli roast beef shredded

Unroll crescent rolls and separate. Place triangles on an ungreased baking sheet. Place a half a slice of cheese and some roast beef on each one. Roll dough toward point starting at large end. Bake at 375ºF for 11 to 13 minutes.

FINGER SANDWICHES

Cream Cheese, Bell Pepper, Pecan Finger Sandwiches

16 oz. cream cheese, softened
1/4 c. miracle whip
1/2 c. sour cream
1 med. bell pepper, diced
1/4 c. diced onion
1/2 c. chopped pecans

Blend first 6 ingredients together. Trim crusts from favorite bread. Cover half the slices generously with the mixture and top with remaining slices. Cut into finger sandwiches.

Cucumber Cream Cheese Finger Sandwiches

1 cucumber
1 (8 oz.) Philadelphia cream cheese, softened
1 Tbsp. minced onion
2 Tbsp. plain yogurt
dash salt

Shred cucumber. Put in strainer and press out juice. Add other ingredients
Add a small amount green food coloring to make a pale green color. Place filling on crust trimmed bread and cut into desired size sandwiches or use a cookie cutter.

GRILLED SANDWICHES

Grilled Peanut Butter, Apple & Cheese Sandwiches

8 slices raisin bread
1/2 cup peanut butter
4 slices American cheese
1 apple, thinly sliced
4 slices swiss cheese
butter for grilling
Spread 4 slices of bread with peanut butter.
Top each with 1 slice of cheese, 1/4 of the apple slices, and other slice of cheese.
Cover with remaining slices of bread.
Melt butter in a large skillet, grill sandwiches in batches, until browned on both sides.

Grilled Ham & Cheese on Raisin Bread

8 slices raisin bread
4 slices American cheese
4 slices ham
butter

Place a slice of Ham and a slice of Cheese between two slices of raisin bread. Grill in hot skillet in melted butter until browned on both sides.

Grilled Lobster Roll

1/2 cup sandwich spread
1/2 medium cucumber, peeled and finely diced or shredded
1 - 2 Tbsps finely chopped celery
2 small green onions finely sliced
1/2 Tbsp fresh tarragon
1/2 tsp salt
1/4 tsp gr bl. pepper
4 cups chopped cooked lobster meat
butter to grill rolls
8 Split Rolls

Combine all ingredients and chill in refrigerator for an hour to blend flavors. Put mixture on grilled rolls and serve.

Grilled Tuna Salad Sandwiches

1 can tuna, water packed
1 Tbsp miracle whip
3 Tbsp French salad dressing
1 Tbsp minced onion
1/2 cup chopped pecans
1 stalk celery, finely chopped

Mix all, place on favorite bread with a slice of Favorite cheese and grill on both sides until browned.

Grilled Veggie Sandwich

Sandwich:
4 thin slices sweet onions
1 small eggplant, peeled and cut into 1/4 inch thick slices
1 medium zucchini, cut lengthwise in 1/4 inch thick slices
1 medium red bell pepper, cut into thin strips
3/4 cup shredded mozzarella cheese
8 slices sourdough bread, toasted
8 slices fresh tomato

Dressing:
1/4 cup sandwich spread
2 Tbsp plain yogurt
tablespoon chopped fresh cilantro

Oil grilling rack and heat up grill. Grill onion over medium heat. Place zucchini, eggplant, red pepper (skin down) on grill. Spray lightly with cooking oil spray. Cover and cook 12 to 15 minutes or until tender. Turn once during cooking time and spray lightly with cooking oil spray.

Spread bread with 1 Tbsp dressing and layer vegetables with cheese. top with a slice of fresh tomato and top with other slice of bread and serve warm.

PITAS

Chicken Pitas

3 cups cooked chicken, chopped
1/2 c. sandwich spread
1/2 c. crumbled cooked bacon
1/8 tsp gr. black pepper
1/8 tsp salt
lettuce and tomato
pita pockets

Combine all ingredients except lettuce and tomato and place into pitas with lettuce and tomato.

Chicken Avocado Salad Pitas

3 cups cooked chicken, chopped
2 cups sliced cherry tomatoes
2 Tbsp minced onion
1/3 cup sour cream
1/4 cup crumbled cooked bacon
1/8 teaspoon ground black pepper
1/8 teaspoon salt
2 avocados, peeled and sliced
Lettuce

Combine all ingredients except avocado and stuff into Pita pockets with a leaf of lettuce in them. Add a few slices of the avocado along the side and serve.

Tuna Apple Pita Pockets

6 1/2 ounces solid white tuna in water, drained
1/3 cup sandwich spread
2/3 cup apples, chopped
2 pita pocket breads, cut in half
1 cup lettuce, shredded

In a small bowl combine tuna, sandwich spread and apple
Fill each pita half with shredded lettuce and 1/4 of the tuna apple salad..

SANDWICHES

BLT's

8 slices toasted white bread
16 slices cooked bacon
4 slices tomato
lettuce
Sandwich spread

Spread sandwich spread on bread and top with bacon, lettuce and tomato. Slice diagonally and serve with cheese cube stuck on top with toothpick.

Egg Salad Sandwiches

1/2 lb bacon (approx. 12 slices)
8 slices white bread
8 leaves iceberg lettuce, fresh and full
8 slices of ripened tomatoes
8 tablespoons Hellmann's mayonnaise
Cook bacon until crispy, then drain on paper towels.
Toast the 8 slices of bread.
Spread 1 tablespoon mayo on each slice of toasted bread. (More or less, to taste).
Add 1 slice of lettuce to 4 pieces of mayo-spreaded toast.
Add 2 slices of tomato on top of lettuce.
Arrange 3 slices of bacon evenly on top of tomato. (Break bacon slices in half to fit, if needed.).
Add 1 slice of lettuce on top of bacon.
Put the remaining 4 pieces of mayo-spreaded toast on top to finish the sandwiches.
Enjoy!

Waldorf Chicken Salad Sandwiches

2 cups cooked chicken, chopped
3/4 cup unpeeled apples, chopped
1/4 cup celery, chopped
1/2 cup walnuts, chopped
1/2 cup miracle whip
2 Tbsp. plain yogurt
1 tsp. lemon juice
1/8 tsp. salt

Combine all ingredients in a medium bowl and mix well.
8 slices raisin bread
lettuce
Make sandwiches with raisin bread and lettuce.

SUB SANDWICHES AND HOAGIES

Crab Subs

1 cup fresh picked crabmeat
1/4 cup sandwich spread
Salt and pepper to taste
4 leaves leafy green lettuce
4 slices tomato
4 crusty sandwich rolls

Toss together the crabmeat, sandwich dressing, and salt and pepper. Pile on toasted crusty sanwich rolls with lettuce and tomato.

Fruit & Chicken Salad Subs

4 Sm sub sandwich rolls, cut in half
1 cup chicken salad
12 very thin apple slices
4 slices cheese

Layer bottom half of each roll with salad, 3 apple slices and 1 cheese slice. Top with tops of rolls. 4 servings

Meatball Subs

Frozen meatballs
1 can spaghetti sauce
2 c. mozzarella, shredded
Small Subs sliced or hot dog buns split

Place meatballs in spaghetti sauce and cook in slow cooker 4 hours on low. Spoon onto subs and top with shredded mozzarella. Serve warm.
