Spinach Pasta Shells Recipe
Spinach Pasta Shells - 24g Carbs, 2g Fiber, 2g Sugar
Number of Servings: 5
Serving Size: 1 cup
5 oz low carb uncooked medium shell pasta (about 2 cups)
9 oz frozen chopped spinach
2 Tbsp olive oil, divided
4 minced garlic cloves
1 tsp finely minced basil
Pepper to taste
1/4 cup grated Parmesan cheese
1. Cook pasta according to package directions, omitting salt. Defrost spinach in microwave. Squeeze all liquid from spinach making sure there is no water left.
2. In a medium nonstick skillet, saute spinach in 1 tablespoon olive
oil over medium-high heat for approximately 5 minutes. Add garlic, basil,
Parmesan cheese; saute 1 minute. Add pepper to taste
3. Drain pasta. Add spinach mixture and 1 tablespoon olive oil to
pasta and toss.
