Pumpkin Cupcakes Recipe

Guest Author - Brandii Lacey

Pumpkin cupcakes are a fun and budget friendly Halloween treat. A box of cake mix, some frosting, and food coloring are the basics ingredients for the festive recipe.

Ingredients :
  • 1 box of yellow cake mix

  • 1 container of vanilla frosting

  • 1 box of food coloring

  • Cupcake pan

  • Candy for decorating

  1. Prepare the cake mix according to package directions.

  2. Separate the cake batter into several smaller mixing bowls.

  3. Add drops of each food coloring you desire into the mixing bowls. Some
colors that work well with the yellow cake mix are purple, green, and orange.
Start with five drops, and increase gradually until you get the color you desire.

  4. Spray cupcake pans with non stick cooking spray, or use cupcake liners.

  5. Bake cupcakes according to package directions.

  6. Separate the vanilla frosting into separate bowls.

  7. Add food coloring until you get the desired shade.

  8. After the cupcakes are cooked, remove from oven and let cool.

  9. Place one cupcake on a plate. This cupcake will be your pumpkin head,
where you will later add eyes, a nose, and a mouth.

  10. Spread orange icing (or whatever color you wish) over the pumpkin head.

  11. If desired, spread some green icing on top of the head for the stem. If you baked a green cupcake, you can also cut out a stem from that and add it to the pumpkin. A little bit of icing will help it stay put.

  12. Once the pumpkin head and stem are covered with icing, you can begin creating the pumpkin face.

  13. Place leftover icing in a small plastic bag and seal tightly. Gently squeeze icing down into a bottom corner of the bag. Cut off the point off of the corner where the icing has gathered, use this to add facial features or other decorations to your pumpkin.

  14. Candy Corn, Sprees, Lifesavers, Skittles, and Red Hots are perfect types of candy for adding eyes, noses, and mouths.

Halloween Safety Tips
  1. Always make sure an adult is present when trick or treating.

  2. Adults and kids should have some type of reflective item on their
costume and/or trick or treat bag. Always bring a flashlight and cell phone.

  3. Keep an eye out for your pet, as he or she may not be prepared for the onslaught of costumed kids on your evening walk. Also, watch out for fallen candy, which can be harmful to pets.

  4. Watch out for luminaries. While these are really fun and festive decorations, kids often want to peek down inside the luminary bag. Many kids will have costumes that include long wigs, most that are not fire proof. Some luminaries know have battery operated tea lights, but check first to be safe.

  5. Make sure to go through your childís candy at the end of the night, and discard anything thatís not properly wrapped or sealed.
