Diabetic Friendly Holiday Dessert Recipe

Worried that you won't be able to eat your favorite holiday dessert? Does the thought of making a tasteless dessert spoil your holiday? Don't worry here are some dessert recipes which are diabetic friendly.

Diabetic Crustless Pecan Pie Recipe

Ingredients:
2 tablespoons butter
2 large eggs
1 cup light syrup
1/8 teaspoon salt
1/2 cup sugar substitute (Splenda or other)
1 tablespoon flour
1 teaspoon vanilla extract
1 1/2 cup pecan halves
1 teaspoon cinnamon
1 teaspoon nutmeg


Directions:

Melt butter and aside to cool down. Add in order, eggs, syrup, salt, sugar substitute, flour, vanilla extract, butter and spices.
Beat the mixture on slow speed until blended smoothly.
Stir in pecans and make sure they are coated with mixture.

Bake at 350 for about 45 min. to an hour.

This recipe for Diabetic Pecan Pie serves/makes 8

Skillet Sweet potato Recipe
Prep: 10 minutes
Cook: 25 minutes
Ingredients
1 pound sweet potatoes, peeled and sliced, or 1 18-ounce can sweet potatoes
1/2 teaspoon finely shredded orange zest
1/2 cup low carb orange juice or orange juice from zest
1 tablespoon molasses,brown sugar or brown sugar substitude
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/8 teaspoon ground allspice
1/4 teaspoon nutmeg

Directions
1. In a large skillet bring 1 inch of water to boiling, then add fresh sweet potatoes; reduce heat. Cover and simmer for 20 minutes or until tender. Drain well. Or in unable to find fresh sweet potatoes use canned. Drain canned sweet potatoes and cut into 2-inch pieces; set aside.

2. For sauce, in a small bowl combine orange peel, orange juice, molasses or brown sugar, salt,and spices. Pour over potatoes in skillet.

3. Cook and stir gently until bubbly. Simmer, uncovered, for 5 minutes or until potatoes are glazed, spooning sauce over potatoes occasionally. Makes 4 servings.

Sugarless and Crustless Apple Pie

Ingredients:
6 cups sliced peeled tart apples
1/3 cup apple juice concentrate
2 tablespoons quick cooking tapioca
1 teaspoon ground cinnamon
1 teaspoon nutmeg
1 teaspoon allspice
1 teaspoon mace
1/4 cup finely chopped walnuts

Directions:

In a large bowl, combine the first four ingredients and let stand for 15 minutes. Stir and pour into foil or glass pie tin. Sprinkle with nuts. Bake at 425 for 15 minutes. Reduce heat to 350 and bake 40-50 minutes longer or until apples are tender. Cover edges with foil during the last 15 minutes of baking if necessary.

I think you will find these recipes to be both satisfying and healthy. But remember, moderation, in all things. Don't Guess, Test.
