Chicken Roll Up Recipe

Guest Author - Brandii Lacey

Chicken for dinner is a healthy and easy option when cooking for kids. However, having the same chicken recipe over and over again can get old fast!

If you're tired of the same old chicken recipe for dinner, consider this change of pace with this Chicken Roll Up recipe:

Ingredients:

  • 1 pack of boneless skinless chicken breasts or tenders

  • 1 bottle of your favorite barbecue sauce

  • 1 pack (2 cups) of shredded cheddar cheese, or your favorite shredded cheese blend

  • 1 package of bacon or turkey bacon (optional)

    Directions:

    1. Spray the slow cooker insert with a not stick cooking spray.

    2. Pour the barbecue sauce into the slow cooker until it covers the bottom.

    3. Cut the chicken breasts into strips (unless you already have the package of chicken tenders)

    4. Spread two tablespoons of barbecue sauce on each strip.

    5. Sprinkle the shredded cheese over the barbecue sauce.

    6. Gently roll the chicken strip from one end to the other.

    7. If desired, wrap one slice or a half of slice of bacon around each roll up.

    8. Place the chicken roll ups in the slow cooker, on top of the sauce.

    9. Cover and cook on low for six to eight hours, or until they are cooked through and tender.

This recipe may also be baked in the oven:

    1. Pre-heat the oven to 325 degrees.

    2. Spray your casserole dish with a non stick cooking spray.

    3. Repeat steps one through seven above, and then place the roll ups in the casserole dish.

    4. Pour the remaining barbecue sauce over the chicken roll ups.

    5. Bake for thirty to thirty five minutes, or until cooked throughout.

Chicken Roll Ups are a fun way to get kids involved in the kitchen. It can be fun for kids to come up with their own versions of chicken roll ups. You never know, they just might surprise you with their creations!

Another nice feature about this recipe is that it caters to family members with different tastes. It's easy to add a sweet barbecue sauce to some of the roll ups, and a spicier sauce to others.
