Oatmeal Blueberry Pancake recipe These are great on a cold winter day. Be sure to include some bacon or sauage for your protein. Remember all foods affects everyone's blood sugar differently. If this is a new food to you be sure to test before and after you've eaten these pancakes. Be sure to add some protien with your breakfast. Eggs or bacon. Bacon is better for you than sausage since it has less fat. Freeze any extras. Pop them in the toaster oven and you have more breakfasts. Oatmeal Blueberry Pancake 1/2 cup old-fashioned oatmeal 1/4 cup low-fat cottage cheese (or tofu) 4 egg whites 1/4 cup blueberries 1 tsp vanilla 1/4 tsp cinnamon 1/4 tsp nutmeg 1/4 tsp allspice Combine the oatmeal, cottage cheese, egg whites, vanilla extract, cinnamon,nutmeg and allspice in a blender until smooth. Fold in blueberries. Spray a nonstick skillet with cooking spray. Add the batter and cook over medium heat until both sides are lightly browned.
