Chicken and Dumplings Recipe

Who can resist the smell, taste, and comfort of Chicken and Dumplings?

I love chicken and dumplings, but could never figure out the secret behind tasty dumplings. My dumplings would always turn out dry.

After experimenting countless times, I literally just winged it and used store bought biscuit dough for the dumplings.

The result?

A very satisfying and easy chicken and dumplings recipe made with chicken stock and cooked over low heat.

Ingredients:

3 boxes of Chicken Stock

2 packs of boneless, skinless, chicken breast, thinly sliced

1 bunch of fresh celery

1 yellow online

3 cups of fresh carrots

Salt and Pepper to taste

4 small can of refrigerated biscuit dough (such as Pillsbury) or one large can

Directions:

1. Heat chicken stock over low heat.

2. Add chicken, carrots, celery, and onions.

3. Season with salt and pepper.

4. Bring to a boil, and then simmer for 2 hours, stirring often.

5. While the chicken mixture is cooking, heat remaining chicken stock in pot. Drop Ĺ to 1 inch rolls of dough into broth. Cook over low heat for twenty-thirty minutes.

6. Gently add dumplings to the chicken mixture and serve


Notes about this recipe:

1. This is a great freezer recipe. After the pot has cooled down, simply place chicken mixture in freezer safe containers or bags. Keep on hand chicken stock and biscuit dough. Thaw out chicken mixture 1 to two days in advance, or warm the stove on low heat. Simply heat the dumplings in the chicken stock for twenty minutes, and combine with the chicken mixture.

2. This recipe can also be cooked in the crock pot. Instead of using boneless, skinless chicken breasts, I'd suggest using a whole chicken. Once it's cooked in the crock pot, remove and cut the chicken away from the bone. Put chicken back in the crock pot with veggies, and add more chicken stock. Turn on high and add biscuit dough. Cook for thirty minutes or until dumplings are ready.

3. Kids and biscuit dough--what a great combination! Save some leftover dough and let your kid have fun being chef for the evening. While the chicken and dumplings cook, your child can make his own mini pizza dough. Let him roll out the dough and try a professional pizza toss! Or, bring out your cookie cutters and let him make his own creative biscuits for dinner. If you donít have cookie cutters, turn your cups of all sizes upside down.
