Party Meatballs Recipes
You might have noticed that I love meatballs! Oh yes.. those great versatile meatballs that can be fixed in so many ways and served in any number of ways as well. Serve with party picks for fun at parties or over rice or noodles or piled on a hoagie for a tasty meatball sub! You can't lose with meatballs! Here are several recipes for tasty delights including the basic beef meatball recipe. Experiment. Make your own creations and let your guests try them all! Most importantly always have fun with cooking. You never know your accidental creation might be the next big hit!

Basic Meatball Recipe

2 lb extra lean ground beef
2 cups biscuit/baking mix
2 eggs
1/3 cup milk
2 garlic cloves, minced
1 onion, minced
1/2 teaspoon pepper
1/4 teaspoon salt

Preheat oven to 400. Combine all ingredients well. Shape into balls (I like to make them about 1 inch). Place on a large greased shallow baking pan. Bake 20 - 25 minutes until the meat is no longer pink. Drain well. This makes a few dozen meatballs depending on what size you make them.
NOTE: If you don't have biscuit/baking mix you can substitute 2 cups cracker crumbs. The texture will be different but texture is good right? :)

Cheesy Meatballs Recipe

1/3 cup milk
2 garlic cloves, minced
1 onion, minced
1/4 cup shredded Mozzarella cheese
2 cups finely shredded cheddar cheese
1/2 teaspoon oregano
1/2 teaspoon basil
1/4 teaspoon nutmeg
1/2 teaspoon pepper
1/4 teaspoon salt

Preheat oven to 400. Combine all ingredients well. Shape into 1 inch balls. Place on a large greased shallow baking pan. Bake 20 - 25 minutes until the meat is no longer pink. Drain well. This makes a few dozen meatballs.

Cocktail Meatballs with Cranberry Sauce

Use the basic meatball recipe above and when cooked add this sauce and place in crockpot to simmer until serving.

1 can (16 ounces) cranberry sauce, any style
12 oz bottle chili sauce
1 tablespoon brown sugar, firmly packed
2 teaspoons lemon juice

Heat the sauce ingredients on stove stirring until melted and combined well. Pour over meatballs in crock pot and keep warm until serving.

Barbecue Meatballs

Use basic meatball recipe above and the sauce below for some lip smackin meatballs!

2 Tbsp butter, unsalted
2 small onions minced finely
1/2 cup ketchup
6 Tbsp brown sugar
6 Tbsp worcestershire sauce
1/4 cup steak sauce
2 Tbsp cider vinegar
1/2 cup water
1/8 teaspoon hot pepper sauce

In medium-sized saucepan, melt butter over medium-low heat.
Add onions and saute for 5 minutes until translucent.
Stir in ketchup, sugar, Worcestershire sauce, steak sauce, vinegar, 1/2 cup water, and hot pepper sauce. Bring to a boil; reduce heat and simmer, stirring occasionally, for 20 minutes. Pour over meatballs in crockpot and keep warm until serving.

Teriyaki Meatballs

Use basic meatball recipe above.

1/2 cup soy sauce
2 cup water
2 Tbsp fresh grated ginger
6 Tbsp brown sugar
2 minced garlic clove
4 Tbsp cornstarch
1/2 cup cold water

Combine water, soy sauce, brown sugar, garlic and ginger in saucepan. Heat and stir constantly until starts to boil. Mix cornstarch and cold water well and add to sauce. Cook stirring constantly until the sauce thickens. Pour over meatballs in crockpot and set on keep warm until ready to serve.

Sweet & Sour Meatballs

Use basic meatball recipe above.

1 can pineapple tidbits
2 Tbsp cornstarch
1/2 cup vinegar
2 Tbsp lemon juice
2 Tbsp soy sauce
1/2 cup brown sugar
1 cup chopped green bell pepper

Drain pineapple; reserve syrup. Add enough water to reserve syrup to make 1 cup liquid. Blend pineapple liquid and cornstarch in saucepan. Add vinegar, soy sauce, lemon juice and sugar; cook and stir until thickened and clear. Add pineapple, bell pepper; mix well. Simmer for 15 minutes. Pour over meatballs in crockpot and keep on low until ready to serve.

Batter Fried Tropical Meatballs

Use basic meatball recipe above except do not precook meatballs.

3 eggs
1 1/2 cup flour
1/2 cup oil
1/2 cup white wine
1 1/2 cup beef stock
1 can pineapple tidbits
1/2 cup peeled and diced jicama
4 Tbsp cornstarch
1/2 cup sugar
1/2 cup white vinegar
2 Tbsp soy sauce

In a small bowl, beat the eggs. Add flour and stir until smooth. Dip meatballs into batter and coat well. Heat the oil in a large skillet. Add meatballs and cook over medium heat until meatballs are done and batter is golden brown. Pour off drippings. Add wine, stock, pineapple and jicama to skillet, and simmer uncovered for about 5 minutes. In a cup, mix together cornstarch, sugar, vinegar and soy sauce and blend until smooth. Place meatballs, pineapple mixture and cornstarch mixture in crockpot and simmer until ready to serve. This is great served over rice or as party meatballs.
