This classic antipasto recipe also makes a delicious lunch or vegetarian main dish.

Ingredients
- 2 large, ripe tomatoes
- 8 ounces round Mozzarella cheese
- 1/3 cup fresh basil
- 1/4 cup extra-virgin olive oil
- 2 Tbs red wine vinegar
- 1/4 tsp salt
- 1/4 tsp black pepper, freshly ground
Directions
- Slice the tomato into 1/4" slices.
- Slice the Mozzarella into 1/4" slices.
- Slice the fresh basil into long, thin strips.
- Layer the tomatoes and Mozzarella around a plate, alternating the tomatoes and cheese.
- Sprinkle the basil over the tomatoes and Mozzarella.
- Drizzle the olive oil and vinegar over the the tomatoes and Mozzarella.
- Sprinkle with salt and pepper.
Note: This is not a time to skimp on quality. Since the flavors are simple they need to stand out. Use the best tomatoes available. I will use tomatoes grown by friends or heirloom tomatoes purchased in a grocery store.
