Mozzarella and Tomato Salad Recipe

This classic antipasto recipe also makes a delicious lunch or vegetarian main dish.

Mozzarella and Tomato Salad Recipe

Ingredients

  • 2 large, ripe tomatoes
  • 8 ounces round Mozzarella cheese
  • 1/3 cup fresh basil
  • 1/4 cup extra-virgin olive oil
  • 2 Tbs red wine vinegar
  • 1/4 tsp salt
  • 1/4 tsp black pepper, freshly ground

Directions

  1. Slice the tomato into 1/4" slices.
  2. Slice the Mozzarella into 1/4" slices.
  3. Slice the fresh basil into long, thin strips.
  4. Layer the tomatoes and Mozzarella around a plate, alternating the tomatoes and cheese.
  5. Sprinkle the basil over the tomatoes and Mozzarella.
  6. Drizzle the olive oil and vinegar over the the tomatoes and Mozzarella.
  7. Sprinkle with salt and pepper.

Note: This is not a time to skimp on quality. Since the flavors are simple they need to stand out. Use the best tomatoes available. I will use tomatoes grown by friends or heirloom tomatoes purchased in a grocery store.
