Hot and Spicy Soba Noodles with Vegetables Recipe
Believe it not this recipe is fairly quick and very easy. If you have not had soba noodles you are in for a treat. Eating soba noodles is somewhat like eating brown rice instead of white.
INGREDIENTS
1/4 cup mirin*
2 Tbspn ginger root, grated
2 coves garlic, finely minced
1 cup broccoli florets
1 cup broccoli stems, peeled and thinly sliced on sliced
1 cup carrots, peeled and thinly sliced on angle
1 cup white cabbage, shredded
3 scallions or green onions, diced
1/4 cup water
1/2 tspn sesame oil**
¾ tspn cayenne pepper
1 Tbspn honey
1 tspn hoisin sauce**
4 cups cooked and drained soba noodles***
Soy sauce
DIRECTIONS
Cook soba noodles according to package directions, drain, cover and set aside.+
In large skillet or wok heat mirin over medium-high heat until it starts to lightly boil. Add ginger, garlic, carrots, broccoli florets and broccoli stems to mirin. Stir for about 5 to 6 minutes or until carrots soften to bite. Add shredded cabbage and diced scallion, and cover skillet. Cook 2 to 3 minutes covered. Remove skillet from heat green onions; cover and cook for three more minutes. Stir once more and remove vegetables with a slotted spoon, place in a large bowl, place plate or foil over vegetable to keep warm.
In same skillet, add water, sesame oil, cayenne pepper, honey and hoisin sauce, heat until the mixture starts to simmer. Add noodles to skillet with vegetables, stir to reheat, add soy sauce to taste and serve.
Makes 4 servings.
Hints
*Mirin is a seasoned, rice-based low content alcohol wine, that is used in Japanese cooking. If you cannot find mirin, use seasoned rice vinegar.
**Sesame oil and hoisin sauce can be purchased at most supermarkets, look in condiments aisle, if not there, check ethnic aisle for products.
***Soba noodles are Japanese noodles made of buckwheat flour. They can be found in the pasta aisle or ethnic food section.
+Soba noodles are cooked the same way spaghetti is cooked. Cook for 8 to 10 minutes.
For dessert served sliced or chunked pineapple sautéed in butter and brown sugar.Recipe below.
Sauteed Pineapple Recipe
3 cups fresh pineapple
2 tbspn butter
1/4 cup brown sugar
DIRECTIONS
In a large pan, combine butter and brown sugar over medium heat. Add pineapple to pan and cook until brown sugar and butter blends and make a sauce. This should take no more than 5 or 6 minutes. Makes about 4 servings. Serve warm.
