Winter Breakfast Treats Recipe
Puffy Orange Pancakes - 14g or 8g Carbs, 0g Fiber


Low Fat/Low Carb Versions of Orange pancakes

If you don't have a large cast-iron skillet, use any skillet that is oven-proof. Zest the orange first, and then juice it. To help with more juice, be sure to roll the orange on a counter a few times. You can also make a variation and use your favorite citrus. Try a blood orange for something spectacular and garnish with some oranges. Use a low carb syrup or sprinkle with a little bit of confectionary sugar or sugar free jam instead of the juice.

Low Fat Puffy Orange Pancakes
1/2 Tbsp unsalted butter
1/4 cup skim or soy milk
1 large egg and two egg whites(or eggbeaters)
1/4 cup unbleached all-purpose flour
Pinch of salt
Grated zest of one orange
Juice of one orange
Ground cinnamon
1 tsp. Orange flavor

Low Carb Puffy Orange Pancakes
1/2 Tbsp unsalted butter
1/4 cup skim or soy milk
2 large eggs(or eggbeaters)
1/8 cup all-purpose unbleached white flour
Pinch of salt
Grated zest of one orange
Juice of one orange
Ground cinnamon
1 tsp. Orange flavor

Preheat the oven to 450 degrees.

Melt the butter in a large cast-iron skillet over medium heat. Be
sure that the melted butter covers the sides and bottom of the skillet.
Don't let the butter burn.

In a blender, combine the milk, egg and egg whites, flour, orange flavor and salt.
Blend until just well combined and airy. Add the grated orange rind and stir
into the batter. Leaving room for another pancake, pour half the
batter into the heated skillet to form one pancake and use the rest
of the batter to make a second pancake.

Put the skillet into the preheated oven and bake for about 12 minutes,
until the pancakes are puffed and golden brown. Remove the pan from
the oven and sprinkle the pancakes with cinnamon. Pour the orange
juice over the pancakes and serve.

Serving Suggestion:
For a lower-fat version, try spraying the pan with nonstick
butter-flavored cooking spray.

These are a low carb pancake. Pair with your favorite turkey breakfast meat. You can also freeze them for a cold winter morning. Just put them in freezer bag take out and nuke. Then you can have something than a boring breakfast on a cold winter day.
