Shrewsbury Biscuits are a delicious afternoon snack that is delightfully English. Hermoine might be pleased sipping this with her tea!

4oz sugar
4oz butter
1 egg
1 Tbsp lemon rind
8oz flour
1 tsp baking powder
raspberry jam

Mix the butter and sugar, then mix in the egg. Add the lemon rind. Now slowly mix in the flour and baking powder.

Roll out batter and cut into circles. Make a small hole in every other biscuit. Bake 20 minutes at 350F. Let cool. Make pairs together - Put solid biscuit on the bottom, layer in jam, and top with the holed biscuit.
