This is a super easy recipe for a basic, one layer coffee cake or breakfast cake with a crumb topping.
- 1/2 cup butter, softened
- 1 cup flour
- 1 cup sugar
- 1/2 tsp. salt
- 2 tsp. baking powder
- 1 large egg, lightly beaten
- 1 cup milk
Lightly grease and flour a 9" cake pan; set aside. Combine the butter, flour, sugar, and salt in a mixing bowl. Mix together with a fork or pastry blender to form crumbs. Reserve about 1/2 cup of the crumb mixture for the top of the cake. Add the baking powder to the remaining crumbs and mix well. Mix the beaten egg and milk together in a separate bowl and beat well. Add the egg and milk mixture to the crumb mixture and beat again. Pour this batter into the prepared cake pan. Sprinkle the reserved crumbs over the top of the batter in the pan. Bake in a preheated oven at 350º for 35 minutes or until a toothpick inserted in the center of the cake comes out clean.
