Tropical Turkey Salad

Left over cooked turkey combines with fruit and nuts to create a cool and tasty tropical turkey salad.

  • 4 cups cubed cooked turkey
  • 1 cup cubed apples - red delicious, yellow delicious or gala suggested
  • 1 cup chopped pecans
  • 1 can (15 oz.) pineapple tidbits, drained
  • 1 cup mayonnaise
  • 2 tsp. lemon juice
  • 1 can (11 oz.) mandarin oranges, drained

Preparation -
In a large mixing bowl, combine the cubed turkey, cubed apples, chopped pecans and pineapple tidbits. Mix well. Whisk the mayonnaise and lemon juice together. Stir this mixture into the turkey mixture. Stir in the drained mandarin oranges. Cover and chill for at least an hour or two before serving.
