Italian Meatloaf

The addition of Italian sausage, Mozzarella cheese, Italian seasonings and pizza sauce make this meatloaf extra zesty and extra delicious.

  • l lb. lean ground beef
  • 1/2 lb. Italian sausage, removed from casing
  • 1 cup Italian seasoned breadcrumbs
  • 1 lg. egg, lightly beaten
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 8 oz. (1 cup) shredded Mozzarella cheese
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. oregano
  • 1 clove garlic, minced
  • 1 cup pizza sauce

Preparation -
Mix the ground beef and sausage together in a large bowl. In a separate bowl, mix all the remaining ingredients together, but reserve 1/4 cup of the pizza sauce and 1/4 cup of the mozzarella cheese. Using your hands or a large wooden spoon, mix the sauce mixture into the ground beef/sausage mixture. Shape into a loaf. Spray a loaf pan with non-stick cooking spray. Place the meatloaf in the prepared loaf pan. Bake in a preheated oven at 375º for 45 minutes. Remove the pan from the oven and drain any fat from the bottom of the pan. Pour the reserved 1/4 cup of the pizza sauce over the top of the meatloaf. Place it back the oven and bake for 30 more minutes. Top the meatloaf with the reserved mozzarella cheese and bake for about 5 more minutes or until the cheese is melted. Remove from the oven, cover loosely with foil and let stand for about 10 minutes before slicing and serving.
