These fritters are great as appetizers or as a summer side dish.
- 1 egg, lightly beaten
- 1 cup flour
- 1-1/2 tsp. baking powder
- ranch salad dressing mix - 1/2 envelope
- 2 cups peeled, grated zucchini
Whisk the milk and egg together in a large mixing bowl. Stir the flour, baking powder and dry salad dressing mix into the egg mixture. Blend well, then fold in the grated zucchini. Fry in a deep fryer set at 375º or in a deep, heavy skillet with oil to a depth of at least 2". Drop the batter by tablespoons full into the hot oil. Fry until golden brown, turning one time. Drain on white paper towels before serving. These are great with a sour-cream and horseradish topping.
