The Flavor of Route 66 - Barbecue Beef Sandwiches
Barbecue Beef Sandwiches- 1 - 4 lb beef Chuck Roast
- meat tenderizer
- 1 onion - chopped
- 1 green pepper - chopped
- 1 cup ketchup
- 1 cup beef broth
- 2/3 cup chili sauce
- 1/4 cup vinegar
- 1/4 cup brown sugar
- 3 T. worcestershire sauce
- 2 T. prepared mustard
- 2 T. lemon juice
- 2 T. honey
- salt and pepper to taste
- 1/4 tsp. cayenne pepper
- 2 small jalapenos, chopped
- 1 T. liquid smoke
- 14 Kaiser rolls
Preparation - Sprinkle meat tenderizer all over the beef roast. Bake at 350º for 2 hours or until tender. Remove the roast and let cool. In a large saucepan, add remaining ingredients. simmer for 10 minutes. Shred the roast and place in a large skillet. Pour the sauce over the beef and toss to coat all the meat. Simmer for 1 hour, stirring often to prevent the meat from sticking to the skillet. Serve on Kaiser rolls.
