Asparagus Citrus Salad Recipe
Asparagus Citrus SaladFresh asparagus pieces, lightly steamed until tender crisp, are combined with tender salad greens, mandarin orange sections and red onion slices in this colorful, easy to prepare springtime salad.
- 12 spears fresh asparagus, cut diagonally into pieces about 2" long
- 1 bag (6 - 8 oz.) spring mix salad greens
- 1 can (11 oz.) mandarin oranges - drained
- 1 small red onion - thinly sliced
- 1/4 cup chopped walnuts
- 2/3 cup vinaigrette or raspberry vinaigrette dressing
Preparation - Steam the asparagus pieces, just until tender-crisp - about 5 minutes on the stove or about 3 minutes in a microwave oven. Drain and let cool to room temperature. In a large serving bowl, mix the salad greens with the cooled asparagus pieces, mandarin oranges, thinly sliced red onion and chopped walnuts. Pour the salad dressing over the mixture and toss lightly to coat evenly. Makes about six servings.
