Scalloped Au Gratin Potatoes

Here's a great recipe to make rich, cheesy, creamy scalloped potatoes from scratch.

  • 6 medium all-purpose potatoes, peeled and sliced
  • 1/4 cup diced onions
  • 1/4 cup diced red peppers (optional)
  • 1/4 cup butter or margarine
  • 1/4 lb. Velveeta® or similar processed cheese, shredded or cut in cubes
  • 1/4 cup milk
  • 1 tsp. dry mustard
  • 1 tsp. salt
  • 1/4 tsp. pepper

Preparation -
Arrange the sliced potatoes in a buttered 2 quart casserole dish; set aside. In a medium skillet, over medium heat, saute the onions and red peppers in 1 tablespoon butter or margarine, until barely tender. Stir in the cheese, milk, dry mustard, salt, pepper and the remaining butter or margarine. Simmer over low heat until the cheese is melted, stirring constantly. Pour the mixture over the sliced potatoes in the casserole and stir gently. Bake in a preheated oven at 350º for 45 to 55 minutes or until the sauce is thickened and bubbly and the potatoes are tender.
