Baked Apple Pancakes- 4 T. butter
- 1/2 cup sugar + 2 T. sugar
- 3/4 tsp. cinnamon
- 2 Granny Smith or other large tart apples - peeled, cored, and sliced very thin
- 8 eggs
- 1-1/3 cups milk
- 2/3 cup flour
- 1/2 tsp. salt
- 2 tsp. vanilla
- confectioners' sugar
Preparation - Melt the butter in deep 9" or 10" skillet with an oven-proof handle. (A good cast iron skillet is perfect for this.) Mix 1/2 cup sugar and the cinnamon together. Sprinkle the mixture in the bottom of the skillet. Scatter the apple slices over the sugar mixture. Cook over medium heat for about 4 minutes, stirring occasionally. Remove from heat and set aside. In a mixing bowl, beat the eggs, milk, flour, salt, vanilla and the remaining 2 tablespoons of sugar together. Pour the mixture over the apples in the skillet. Bake in a preheated oven at 400º for 15 to 20 minutes, or until light golden brown and puffy. Move to a serving platter, sprinkle with confectioners' sugar and serve piping hot.
