It's no secret that I love the rotisserie chickens from Costco. They are three pounds of ready-to-eat goodness. When we finish making sliced chicken sandwiches, then it's time to get creative with the rest of that chicken. We are a thrifty bunch, and nobody likes to throw good food away. This week I made a lovely chicken vegetable soup with barley and quinoa. That was after I developed this Jalapena Avocado Chicken Salad Recipe.

Jalapeno Avocado Chicken Salad is a healthy and delicious way to make a sandwich. Serve it on a roll as a classic sandwich. It's fantastic open-face on a crispy corn tortilla or rice cake.
