We recently were in Cambodia and I fell in love once again with this special cuisine. It is shares ingredients of Thailand and Vietnam, but has it's own wonderful distinctive personality.

This recipe is based on the recipe from Elephant Walk which just became available again in paperback. Th last time I checked at Amazon used copies were $165 each. So I was simply delighted when it became available again directly from the author.

This is a wonderful dish-so easy and the smokiness makes it very special.

Cambodian Shrimp & Pork Stir Fry with Smokey Eggplant (Cha Traop Dot)
This amazing smokey eggplant dish with pork and shrimp is simply amazing. It is a healthy choice dish with very little fat.
