I just came back from an amazing Cruise on Holland America's Ms Prisendam (less than 800 passengers). This trip was bitter-sweet as wer had planned this cruise for our 40th anniversary. It was sad doing the cruise alone but I know Steve was close by and happy I was doing "our" trip.

While exploring historical sites and local cuisine in Spain, Greece, Turkey, Russia, Ukraine, Bulgaria, Egypt, Israel, Croatia and Italy I was missing my favourite cuisine so much. No Thai food on the ship or in ports.

I resorted to Indonesian Sambal to create some spice on my plate on the lovely chef's offerings on the ship. I did manage to have sashimi with wasabi a few times to help my craving for spice and Asian food.

Now that I am home I have much to do so an easy meal is in order. Here is a favourite I developed a few months ago for those make dinner in 20 minute nights. Start the jasmine rice in your rice cooker, and begin preparing the ready made Thai Lobster Balls with Green Curry and fresh seasonal veggies of choice. ENJOY!
