Chicken Rice Porridge (Gai Kao Tom)
In Thailand a popular breakfast is Gai Kao Tom which is know by the Chinese names of Jook or Congee. This rice porridge is a traditional Chinese comfort food, and is a favorite late-night snack, breakfast in a bowl and dim sum specialty all over Asia.

Rice porridge is a popular comfort food all over Asia and Southeast Asia.
This Thai version of Jook or Congee is especially flavourful. It is
perfect both for breakfasts, but as a late night snack.

When I fly into Asia this is always my first request as the flights often
arrive in the wee hours of the night and this comfort food is perfect to
help you get a good night's sleep.

Chicken Rice Porridge (Gai Kao Tom)
In Thailand a popular breakfast is Gai Kao Tom which is know by the
Chinese names of Jook or Congee. This rice porridge is a traditional
Chinese comfort food, and is a favorite late-night snack, breakfast in a
bowl and dim sum specialty all over Asia.

Congee is often accompanied by fried bread sticks known as youtiao in
Chinese. Congee is soupy long cooked rice in broth mixture. It can be
plain but usually contains, pork, fish or chicken. It is served with
various salty or pickled condiments such as salted eggs, pickled radish.
pickled ginger, preserved (pickled)vegetables, pickled garlic, fried
shallots, and nam phrik pla (fish sauce and minced chiles).

In Thailand, congee is always made with Jasmine fragrant rice. Usual
additions are shallots, chile paste and garlic, but sometimes ginger and
cilantro or Thai Basil are added.

Congee can be made in a pot, or in a rice cooker. Some rice cookers even
have a "congee" setting, allowing you to cook breakfast congee overnight.
