Turkey Vegetable Soup

We've had a tiny snow here, and the weather is definitely cooler. That's leading me to think of the coming holidays. How big is your roaster pan? Mine can hold a truly gigantic turkey. Cheap turkey always makes me want to buy the largest turkey that I can stuff into the roaster, so that I can "save money." After Thanksgiving, I am always thinking of ways to use that mountain of leftover turkey.
What happens when you buy about twice as much turkey as any family can eat? There are dozens of turkey sandwiches that you can make. Get creative with that leftover turkey.
What if you want a hot dish that goes well with sandwiches? Make a big pot of Turkey Vegetable Soup! It's an easy soup to make. In addition to helping you with the excess turkey problem, it uses a lot of extra veggies. Get those little dabs of veggies out of your refrigerator and into the soup!
There are some variations that I did not include in the article, since I didn't want the article to be too long. I love to share the extra variations with all of you!
If you like noodles in your soup, cook them separately from the soup. They should be just al dente. Add the drained noodles to the soup after the soup has been removed from the heat. They can absorb the flavor of the soup as it is resting.
If you love the idea of noodles, but cringe at the thought of all of those carbs, no problemo! Use House Food Tofu Shirataki noodles. (That's my favorite brand.) They look like spaghetti and the 8 ounce package has 40 calories and 6 grams of carb. Drain the noodles in a colander and rinse them. Chop the noodles into pieces about two inches long. Add these noodles to the soup when you add the V-8. They will simmer for about 12 minutes, which is longer than is recommended on the package. That's okay! They don't have a lot of flavor on their own, but the soup will flavor them. These noodles will add extra interest to the soup.
