One of the favourite street foods in Thailand is the wonderful grilled chicken. Each region of Thailand has a different way making this popular item. I especially am fond of the Gai Yang of Isan (Northeastern) Thailand.

When traveling by bus or train at various stops along the way, street hawkers come aboard yelling GAI YANG - GAI YANG - GAI YANG!!!!!! waving these skinny long legged barbecued birds attached to bamboo skewers. The aroma is so irrestiable almost every traveler eagerly hands a few baht over in exchange for a flavourful chicken on a stick and bag of rice-usually sticky rice, to feast on as they travel along the bumpy roads or tracks to their destination.

Here is an easy but very tasty recipe for Grilled Chicken-Isan style (Gai Yang)
