Want to try something different for a warm breakfast on a chilly morning? Try the following recipe for fritters and serve with scrambled eggs and your favorite hot drinks.
Huckleberry Fritters
2 cups huckleberries (blueberries can also be used for this recipe)
3 cups flour
1/2 cup sugar
1 1/4 teaspoons baking powder
3 eggs
1/2 cup water
Vegetable Oil
Wash berries and drain well. Sift dry ingredients together. Beat eggs and water till foamy. Mix right away into the dry ingredients. Carefully fold in the berries. Heat oil or shortening in deep cast iron skillet, about two inches of oil should do it, till a small drop of batter sizzles immediately when dropped in, about 350 degrees.
Drop batter by tablespoon into the hot oil, turning often to brown on all sides, a deep golden brown is what you want. Drain on paper towels and serve hot. Try some maple syrup on them just for fun - you might like that. Yields about two dozen fritters, so do not be selfish, you will have plenty to share.
