Greetings from the Land of OZ!

Kansas has some interesting weather! Two days ago, it was 80 degrees F. Contrast that with 4 years ago on the same day. We had so much snow on that day in 2013 that they closed the FedEx Hub in our town.

This recipe is so tasty and easy that I just had to share it with you. If you have your own favorite brand of giardiniera, of course, use that! Mezzetta brand is readily available in a large number of markets, and it is delicious.

Orzo Salad Recipe
